Local resort improves garden, adds crops to menu | News
TUCSON, AZ (Tucson News Now)- A local resort is bringing new meaning to the term 'fresh produce' by growing a garden and adding the bounty to its menu offerings.
The Westward Look Resort has an 1,800 square foot garden on its property, but recently expanded the garden to 3,000 square feet in an effort to provide resort guests with locally grown produce.
According to the Westward Look landscape manager, Raymundo Ocampo, he was harvesting more than 120 pounds of tomatoes a week earlier this summer.
The garden boasts about 15 varieties of tomato, peppers, pomegranates and swiss chard. This produce has helped save the kitchen nearly $1,000 on its food budget, according to Executive Chef Antonio Rodriguez.
Rodriguez also said what he serves depends on the season and the availability of ingredients. There are 20 different dishes on the menu that highlight ingredients available now from the garden.
